In a medium saucepan, combine the water, granulated sugar, brown sugar, pumpkin puree, and all of the ground spices and/or cinnamon sticks.
Place the saucepan over medium heat. Stir the mixture continuously until the sugars have completely dissolved.
Reduce the heat to low-medium and allow the syrup to simmer gently for 5-6 minutes. It is important not to let the mixture come to a rolling boil. This simmering period allows the flavors to infuse beautifully.
Remove the saucepan from the heat. Carefully pour the syrup through a fine-mesh strainer into a clean, airtight bottle or jar to remove the pumpkin solids and spices.
The syrup can be stored in the refrigerator for up to two weeks. Be sure to give the container a good shake before each use as some natural separation may occur.
